Happy Meal-Planning Monday!

This week on Monday, I’ve planned Sausage, Pepper, Onion over couscous dinner. No recipe here. Find a base of your liking, think cous cous, brown rice, quinoa and top it with a meat and some veggies and you have yourself an easy weeknight meal.
Tuesday, I’m making White Bean Turkey Chili with Cornbread. I had this on the menu a week ago but plans changed and we had Taco Tuesday at my parents, so since I still had the majority of the ingredients it’s back on for this week and we love it!
Wednesday, I’m making dinner with the help of Trader Joe’s, they have the best frozen food section to help on nights you don’t want a lot of fuss with dinner. I’m making their Riced Cauliflower Stir Fry, haven’t tried it before so I’ll let you know how it turns out. I’m cooking up some chicken to go with it and there you go and easy week night meal!
Thursday, I wanted to cook a recipe with pumpkin so I’m making Gluten-Free Pumpkin Pasta with Spicy Sausage and it cooks up fast in the instant pot which makes for an easy delicious seasonal meal.
Saturday, we are hanging out at our friend’s house and watching Football, hanging by their new pool and relaxing. I imagine some football inspired snacks will be enjoyed!
Sunday, I’m keeping the meal light with a Winter Fruit Salad using in-season fruit, then I’m making the Poppy-seed dressing to go with it and then BBQing up some steak to go with it.
