Having an instant-pot recipe on the menu is great for the working Mamas that want a meal to be prepared fast and still packed with flavor. Our family loves tacos and I love finding different taco recipes to change it up and this one hit the spot.

- 1 tbsp chili powder
- corn tortillas warmed
- 1 avocado diced
- 2 tbsp cilantro chopped
- 1 spoonful plain greek yogurt
- 2 tbsp favorite salsa to each taco
Marinate the steak
Get out the ingredients: lime, olive oil, garlic, salt, cilantro, taco seasoning.
Zest one lime and squeeze the juice from it.
In a small bowl, combine the ingredients to put on the steak to marinate for a few minutes. The marinade includes: zest & juice from 1 lime, 2 tsp of olive oil, garlic, 1/2 tsp salt, 2 tbs cilantro, and 1 tbsp of taco seasoning. Whisk together to mix.
Rub the marinade on both sides of the steak. Let it sit on the steak for 5 minutes.
When the 5 minutes is up, add the can of tomatoes and green chillis on top of the steak into the instant pot.
Cover the instant pot and set it for manual, high pressure for 12 minutes. When the time is up carefully switch the knob to quick release, be careful of the hot steam coming out. Let the steak sit for 5 minutes.
While the steak is cooking, get the ingredients together for the coleslaw mix. The coleslaw mix includes: coleslaw, red onion, jalapeno, 2 tbsp of chopped cilantro, the juice from 1 lime, honey and a sprinkle of salt.
Mix together, sprinkle some chili powder on top and let it sit for a minute.
Get toppings out, coleslaw mix, avocado, greek yogurt, and cilantro.
Slice the avocado like this a scoop it out with a spoon.
