Slow-Cooker: Creamy Chicken Corn Chowder
This soup is creamy, packed with flavor and an easy weeknight meal option!
Ingredients
Chicken Corn Chowder
- 1 lb chicken breasts
- 2 (14) oz cans of cream style corn
- 10 oz can of cream of chicken soup
- 4 oz can of chopped green chiles
- 1 cup chicken stock
- 1 tsp garlic powder
- pinch of salt & pepper
- 8 oz package of cream cheese softened
- 2 tbsp corn starch
- 2 tbsp water
- 2 cups fresh or frozen corn kernels
Toppings
- crispy bacon (6 pieces)
- green onions
- cheddar cheese shredded
Instructions
Slow-Cooker

Get out your slow-cooker and gather these ingredients: chicken, cream corn, chicken soup, green chiles, stock, garlic powder, salt, pepper and cream cheese.

Add all the ingredients to the slow-cooker, cover and set on low for 6-8 hours or on high for 3-4 hours.

20 minutes before you are ready to eat, whisk together the corn starch and water in a small bowl.

When the time is up, open and pull out the chicken and shredded it.

Next, mix in the corn starch mixture and the corn kernels.

Combine all the ingredients, cover and continue cooking for an additional 15-20 minutes.
Prepare the Toppings

Cook the bacon, chop the green onions and shred the cheddar cheese.
Assemble the Chowder

Ladle the soup into bowls when you are ready to serve, add the toppings on top and Enjoy!
