I have another tasty pumpkin meal for you that will leave you completely satisfied on a nice Fall night! This one-pot soup is easy enough to make during the week and makes enough for leftovers!
Sausage and Pumpkin Soup
This is a one-pot meal that you don't want to miss making during the Fall season! It was delicious and we loved eating it along side a slice of pumpkin bread.
Ingredients
- 1 lbs sweet italian sausage remove from casing
- 1 yellow onion chopped
- 2 cloves garlic chopped
- 3 tbsp butter
- 3 tbsp flour
- 2 cups 2% milk
- 2 cups chicken stock
- 1 15 oz can of pumpkin
- parmesan cheese grated to garnish
- parsley chopped to garnish
- Extra virgin olive oil
- salt and pepper to taste
Instructions
Pumpkin and Sausage Soup

Gather all the ingredients for the soup: sausage, onion, garlic, butter, flour, milk,chicken stock and pumpkin.

Get out a large soup pot and brown the sausage (make sure casing has been romoved) until it is brown…drizzle a little EVOO over the sausage.

Once the sausage is brown, add in the chopped onion and garlic and a pinch of salt and pepper. Combine all the ingredients and cook for about 5 mins.

Stir in the butter until it is melted and then sprinkle the flour over the meat mixture. Stir ingredients and cook for 1 minute.

Whisk in the milk, chicken stock and the pumpkin. Bring to a boil and let the soup simmer for 10 minutes.

Get the garnishes ready, grate the Parmesan cheese and chop up the parsley.

When the soup is ready, laddle it into a soup bowl and sprinkle the cheese and parsley on top and Enjoy!
