
This Summertime salad is simple & delicious! It is a perfect side-salad to complement any protein.
Get out all the ingredients: tomatoes, peaches, red onion, basil, feta cheese, EVOO, balsamic vinegar, salt & pepper, and pistachios

Get out a large bowl. Add the tomatoes & red onion.

Cut up and add the peaches.

Chop up the basil and add it to the bowl.

Mix all together. Then add the EVOO and balsamic. A good ratio is a 3:1. Drizzle on and give it a taste test...you can always add more.
Add in a pinch of salt and pepper. Add in as much feta cheese as you would like.

Toss everything together and give it a final taste check.

Add the salad into a small bowl and top with the pistachios to garnish. Enjoy!
