Simple, delicious, one-pot meal!

Gather all the ingredients: sausage, ground beef, evoo, salt & pepper, red onion, garlic, sweet potatoes, red and green bell pepper.
Get out a deep large skillet or dutch oven. Begin by browning the sausage and ground beef. Drizzle evoo over the meat. Cook until no longer pink and drain the fat.
While the meat is cooking, chop up the veggies: onion, bell peppers and sweet potatoes. ( I purchase the sweet potoatos already chopped up from Trader Joe's).
Stir in a big sprinkle of salt and pepper. Then add in the chopped veggies.
Saute the veggies and meat together until the veggies are tender for around 10 minutes. Once the veggies are cooked through, add in the garlic and more salt and pepper.
Saute all together for another 3 minutes or so.
Sprinkle parsley on top and serve. This made a ton of leftovers for us and I enjoyed at least 4 lunches with the leftovers.
