Instant Pot: Flank Steak Tacos

Ingredients

Steak Tacos

  • 1 1/2 lbs flank steak trimmed of fat & sliced thin
  • 2 limes
  • 2 tsp olive oil
  • 2 cloves garlic minced
  • 1 tbsp salt-free taco seasoning
  • 1 can diced tomatoes with green chilies
  • salt
  • 4 tbsp cilantro chopped
  • 2 cups coleslaw mix (purchased from trader joe's)
  • 1/4 red onion cut into skinny strips
  • 1/2 jalapeno remove seeds & diced
  • 1 1/2 tsp honey
  • 1 tbsp chili powder
  • corn tortillas warmed

Toppings

  • 1 avocado diced
  • 2 tbsp cilantro chopped
  • 1 spoonful plain greek yogurt
  • 2 tbsp favorite salsa to each taco

Instructions

Marinate the steak

  1. Get out the ingredients: lime, olive oil, garlic, salt, cilantro, taco seasoning.

  2. Zest one lime and squeeze the juice from it.

  3. In a small bowl, combine the ingredients to put on the steak to marinate for a few minutes. The marinade includes: zest & juice from 1 lime, 2 tsp of olive oil, garlic, 1/2 tsp salt, 2 tbs cilantro, and 1 tbsp of taco seasoning. Whisk together to mix.

  4. Rub the marinade on both sides of the steak. Let it sit on the steak for 5 minutes.

  5. When the 5 minutes is up, add the can of tomatoes and green chillis on top of the steak into the instant pot.

  6. Cover the instant pot and set it for manual, high pressure for 12 minutes. When the time is up carefully switch the knob to quick release, be careful of the hot steam coming out. Let the steak sit for 5 minutes.

Coleslaw Mix

  1. While the steak is cooking, get the ingredients together for the coleslaw mix. The coleslaw mix includes: coleslaw, red onion, jalapeno, 2 tbsp of chopped cilantro, the juice from 1 lime, honey and a sprinkle of salt.

  2. Mix together, sprinkle some chili powder on top and let it sit for a minute.

Toppings

  1. Get toppings out, coleslaw mix, avocado, greek yogurt, and cilantro.

  2. Slice the avocado like this a scoop it out with a spoon.

Assembling the tacos

  1. Warm the tortillas in a pan or a toaster oven. Cut the steak into thin strips

  2. Assemble the tacos, put some steak down first, add the coleslaw mix, a spoonful of greek yogurt, sprinkle on some cilantro and add some of your favorite salsa and Enjoy!
