Ingredients

Beef Burrito Bowl

  • 3 tsp EVOO divided
  • 2 cloves garlic minced
  • ½ yellow onion diced
  • 8 oz lean ground beef
  • ½ tbsp ground cumin
  • ½ tbsp dried coriander
  • ½ tbsp oregano
  • ½ tsp sea salt divided
  • ½ lime juiced
  • 1 cups cauliflower rice
  • 1 avocado diced

Instructions

Beef Burrito Bowl

  1. Gather all the ingredients, EVOO, garlic, onion, ground beef, cumin, coriander, oregano, salt, lime juice, cauliflower rice, and avocado.

  2. Get out a large skillet and heat half of the EVOO over medium heat. Add the garlic and the onion and cook until soft, about 5 minutes.

  3. Once the onion is translucent, add in the ground turkey and cook until no longer pink. Break up the meat into small pieces.

  4. Once the meat is cooked through, drain the fat. Continue cooking over medium heat and add the cumin, coriander, oregano, and half of the salt and lime juice to the pan.

  5. Once you combine all the spices into the meat, cook for another minute. Then transfer the meat to a plate and cover to keep warm.

  6. In the same skillet, add the remaining oil and then the cauliflower rice. Add the remaining salt. Cook the cauliflower rice, stirring occationally until it has warmed through.

  7. Place the cauliflower rice in a bowl, top with the seasoned meat and add the diced avocado on top. Super easy and delicious meal, enjoy!
