Low-carb dinner that is packed with flavor!
Sprinkle cauliflower rice with EVOO and salt & pepper and heat in a pan on med-low heat. Cook until its nice and soft. Put a lid on it until the chicken is ready.
Gather all the ingredients, chicken, cream cheese, sour cream, garlic, salt, pepper, mozzarella cheese, parmasan cheese, and parsley
Get out a baking dish and lay chicken flat in the dish.
In a small bowl, mix together the cream cheese, sour cream, garlic, S & P, and ½ cup of the parmesan cheese. Mix well to combine all together.
Spread the cheese mixture all over the chicken in the baking dish.
Then sprinkle the mozzarella cheese and the remaining ½ of cup of parmesan cheese over top.
Pop the chicken into the oven and bake at 375° for 25-35 minutes.
You can serve the chicken with a small side salad or like I did with cauliflower rice. I put some of the cheese sauce from the baking dish over the cauliflower rice and it was delicious! Sprinkle some parsley on top and dinner is ready!
