Cider Chicken with Roasted Sweet Potatoes

Ingredients

  • 2 large sweet potatoes diced into cubes
  • EVOO
  • black pepper and sea salt
  • 4-6 chicken breasts cook as many as needed to feed your family
  • garlic powder
  • 1 large onion chopped
  • 2 granny smith apples chopped
  • 1 ½ cups apple cider
  • 1 ½ cups chicken stock
  • parsley or cilantro to garnish chopped

Instructions

Preheat oven to 425°

Sweet Potatoes

  1. Get out a baking sheet and line it with foil and spray with olive oil spray. Put cubed potatoes spread out over baking sheet. Drizzle olive oil over potatoes then sprinkle salt and pepper all over potatoes and mix to coat. Roast them in the oven for 15 mins and then flip the potatoes and roast for another 15 mins.

Chicken

  1. While the potatoes are roasting in the oven, gather the rest of the ingredients.

  2. Sprinkle the chicken on each side with salt, pepper and garlic powder.

  3. Add a few tablespoons of EVOO to a large pan and cook the chicken about 4-5 mins per side. When the chicken is finished put on a plate and set aside.

  4. Add the chopped onion and apples to the chicken pan.

  5. Pour in the cider and the stock over the apples and onion and place the chicken back into the pan. Put on low heat and simmer for 20 mins.

  6. When the potatos are ready remove them from the oven.

  7. When you are ready to serve dinner, put a piece of chicken on each plate along with some onions and apples. You can add any remaining liguid on top of the chicken, apples & onion and garnish with parsley or cilantro. Enjoy!
