This is a one-pot meal that you don't want to miss making during the Fall season! It was delicious and we loved eating it along side a slice of pumpkin bread.
Gather all the ingredients for the soup: sausage, onion, garlic, butter, flour, milk, chicken stock and pumpkin.
Get out a large soup pot and brown the sausage (make sure casing has been romoved) until it is brown...drizzle a little EVOO over the sausage.
Once the sausage is brown, add in the chopped onion and garlic and a pinch of salt and pepper. Combine all the ingredients and cook for about 5 mins.
Stir in the butter until it is melted and then sprinkle the flour over the meat mixture. Stir ingredients and cook for 1 minute.
Whisk in the milk, chicken stock and the pumpkin. Bring to a boil and let the soup simmer for 10 minutes.
Get the garnishes ready, grate the Parmesan cheese and chop up the parsley.
When the soup is ready, laddle it into a soup bowl and sprinkle the cheese and parsley on top and Enjoy!
