Sausage and Pumpkin Soup

This is a one-pot meal that you don't want to miss making during the Fall season! It was delicious and we loved eating it along side a slice of pumpkin bread.

Ingredients

  • 1 lbs sweet italian sausage remove from casing
  • 1 yellow onion chopped
  • 2 cloves garlic chopped
  • 3 tbsp butter
  • 3 tbsp flour
  • 2 cups 2% milk
  • 2 cups chicken stock
  • 1 15 oz can of pumpkin
  • parmesan cheese grated to garnish
  • parsley chopped to garnish
  • Extra virgin olive oil
  • salt and pepper to taste

Instructions

Pumpkin and Sausage Soup

  1. Gather all the ingredients for the soup: sausage, onion, garlic, butter, flour, milk,chicken stock and pumpkin.

  2. Get out a large soup pot and brown the sausage (make sure casing has been romoved) until it is brown...drizzle a little EVOO over the sausage.

  3. Once the sausage is brown, add in the chopped onion and garlic and a pinch of salt and pepper. Combine all the ingredients and cook for about 5 mins.

  4. Stir in the butter until it is melted and then sprinkle the flour over the meat mixture. Stir ingredients and cook for 1 minute.

  5. Whisk in the milk, chicken stock and the pumpkin. Bring to a boil and let the soup simmer for 10 minutes.

  6. Get the garnishes ready, grate the Parmesan cheese and chop up the parsley.

  7. When the soup is ready, laddle it into a soup bowl and sprinkle the cheese and parsley on top and Enjoy!
