Slow-Cooker: Sausage, Red Beans & Rice

Ingredients

Sausage, Red Beans & Rice

  • 1 lb sausage (I used turkey) slice into round pieces
  • 2 (15) oz cans of red kidney beans drained
  • 1 (14) oz can of diced tomatoes
  • 1 onion chopped
  • 2 cups cooked brown rice
  • salt and pepper
  • red pepper flakes to taste
  • few dashes hot pepper sauce

Instructions

  1. Slow-cooker

  2. Get out your slow cooker and add the first 4 ingredients: sausage, beans, tomatoes & onion. Add a few dashes of the hot pepper sauce and some pinches of salt & pepper. You can always add more at the end if you need more seasoning.

  3. Set your slow cooker for 6-8 hours on low or 3-4 hours on high.

Rice

  1. Cook the rice before you are ready to serve. I used Trader Joe's brown rice that you microwave in a bag…very easy. Stir everything and see if you need to add any more seasoning.

  2. When you are ready to eat, serve the mixture over brown rice and enjoy your simple & yummy meal!
