When life is busy the slow-cooker can be your best friend. I always like adding in fresh ingredients on top of whatever you are slow cooking so it adds texture and freshness. We really enjoyed the flavors of this meal!

Slow Cooker Chicken and Rice Soup
Easy and delicious meal for the entire family to enjoy on a busy work week evening.
Ingredients
Chicken and Rice Soup
- 2 lbs boneless, skinless chicken breast not frozen
- 10 oz can rotel tomatoes
- 4 oz can of chopped green chiles
- 10 oz can of cream of mushroom soup
- 1 cup chicken stock
- 1 oz packet of taco seasoning
- 3 cups prepared white rice make the rice right before serving the soup
Toppings
- shredded cheddar or pepper jack cheese
- chopped green onions

Gather all the ingredients, chicken, tomatoes, green chiles, cream of mushroom soup, chicken stock, taco seasoning, rice

Get out the slow cooker. Layer in the chicken, tomatoes, green chiles, cream of mushroom soup, chicken stock and taco seasoning. Stir to combine all of the ingredients.

Put the lid on the slow cooker and lock into place. Set on 6-8 hours at low or 3-4 hours on high.

Before you are ready to enjoy the soup, prepare the rice. I used Jasmine Rice from the frozen section at Trader Joes. It takes 3 minutes in the microwave.

Take the chicken out of the slow cooker and shred it and then put back into the soup. Stir to combine all the ingredients.

Ladle the soup into bowls and top with shredded cheese and green onions. Enjoy!
