This soup was simple to make and is packed with flavor! You can enjoy this meal year round and I loved the sausage and orzo in it!

Ingredients

Sausage Orzo Soup

  • 1 lb Italian sausage
  • 2 tbsp olive oil
  • 1 sweet onion diced
  • 3 cloves garlic minced
  • 1 cup celery diced
  • ¾ cup orzo pasta
  • 4 cups chicken broth
  • 2 (15) oz cans petite diced tomatoes
  • 2 tsp Italian seasoning
  • 4 cups loosely-packed spinach
  • salt and pepper
  • parsley to garnish

Instructions

Sausage

  1. Gather all the ingredients, sausage, olive oil, onion, garlic, celery, orzo, chicken broth, diced tomatoes, Italian seasoning, spinach, S & P

  2. In a large soup pot, heat up the oil on med-hi heat. Cook sausage until no longer pink, about 8 mins.

Make the soup

  1. While the sausage is cooking, prep the veggies. Dice up the onion and the celery.

  2. Once the sausage is nice and brown, add in the onion, celery and garlic and saute until tender for 4 minutes.

  3. Next, add in the chicken broth, tomatoes, orzo, and Italian seasoning. Stir to combine all the ingredients. Bring the soup to a boil, then lower the heat to a simmer. Stir occasionally and cook until the pasta is al dente.

  4. Stir in the spinach and cook for 2 minutes, or until completely wilted. Season the soup with salt and pepper to taste.

  5. Garnish with some parsley and laddle into a bowl. Enjoy
