Gluten Free Pumpkin Pasta with Spicy Sausage

This pasta dish is packed with pumpkin flavor and goes so nicely with the sausage & spinach.

Ingredients

Pasta Dish

  • 2 tsp vegan or clarified butter
  • 2 tsp olive oil
  • 1/2 cup onion diced
  • 2 cloves garlic minced
  • 1 lb spicy turkey or chicken sausage
  • 1 cup pumpkin puree
  • 1.5 cups chicken broth
  • 1/3 cup full fat coconut milk
  • 1/2 tsp salt
  • 2.5 cups baby spinach
  • 1/3 cup parmesan cheese
  • 4 cups gluten free or whole grain pasta (2 cups raw for IP)

Instructions

  1. Gather all your ingredients: butter, olive oil, onion, garlic, sausage, pumpkin puree, chicken broth, coconut milk, salt, spinach, parmesan cheese, and pasta.

  2. Get out your instant-pot and put on the saute mode. Add butter & olive oil to melt. Then add the chopped onions and saute until translucent. Next, add in the garlic and cook for a minute.

  3. Prepare the sausage by taking it out of its casing and chopping it into 1/2" disks.

  4. Add the sausage to the IP and cook until it is browning.

  5. Add the pumpkin, chicken broth and salt to the meat and onion mixture and mix it all up.

  6. Then add the 2 cups of uncooked pasta.

  7. Put the lid on the IP and lock in place. Set it to manual for 2 minutes.

  8. When the time is up, be careful of the hot steam and switch the knob to quick release. After the steam has left the IP then unlock and open.

  9. Stir in the coconut milk and spinach. Stir until the spinach is wilted.

  10. Taste to make sure it is seasoned to your liking, if not then add more salt.

  11. When you are ready to serve, dish onto a plate and top it with parmesan cheese. Enjoy!
