I can honestly enjoy this soup at any time of the year! But on a chilly night, this soup will hit the spot and it’s kid-friendly!
Creamy Tomato Basil and Bacon Soup
This soup is perfect to enjoy any season! I served it with a grilled cheese and it was perfect!
Ingredients
- 6 slices bacon diced
- 2 cups carrots shredded
- 1 small onion diced
- 4 cloves garlic minced
- 2 tbsp tomato paste
- 1 28oz can crushed tomatoes
- 1 28oz diced tomatoes
- 4 cups chicken broth
- 1 cup heavy cream
- 15-20 fresh basil leaves chopped

Gather all the ingredients: bacon, carrots, onion, garlic, tomato paste, crushed tomatos, diced tomatoes, chicken broth, heavy cream and basil leaves.

Get out a large soup pot and begin by cooking the bacon until crispy and cut into little pieces.

Once the bacon is done, remove it to a paper towel.

In the same pot add the shredded carrots, onion and garlic and saute for 10 minutes until soft. Then stir in the tomato paste.

Add in the tomatoes and the broth. Bring to a boil and let the soup simmer for 30 minutes.

While soup is simmering, chop up the basil leaves and grate the parmesan cheese. Also, cook up the grilled cheese sandwiches.

I used a hand blender but if you don't own one then blend the soup up in batches and then return to the pot.

Then slowly stir in the heavy cream and continue to stir until it is completely mixed in.

Stir in the chopped basil. Top the soup with bacon pieces and grated Parmesan cheese!
