This is a perfect meal to make during the week! It all cooks in one pan and has so many flavors that work well together to create a tasty meal. My boys loved it and definitely approved, which makes this dinner a winner in my book!
Beef & Rice Skillet Dinner
This dinner is flavorful and kid-friendly! One-pot meals are great for a week night meal and this one is a crowd pleaser!
Ingredients
Beef Skillet
- 1 lb ground beef
- olive oil
- salt and pepper
- 1 ½ tsp cumin
- 1 tsp garlic powder
- 2 tbsp Worcestershire sauce
- 1 red bell pepper chopped
- 1 green bell pepper chopped
- 1 yellow onion chopped
- 8 oz can of tomato sauce
- 10 oz can of diced tomatoes
- 4 cups cooked rice
- 1 ½ cups corn
Toppings
- 1 cup cheddar cheese shredded
- cilantro chopped
Instructions
Cook the Ground Beef

Get out a large skillet and cook the ground beef over medium heat. Add a sprinkle of EVOO. Once meat is cooked, drain the fat and sprinkle salt and pepper over the meat. Then, add the cumin and garlic powder. Stir everything to combine.
Prep the Veggies

Cut up the onion and bell peppers (I only had red bell peppers so I went with that but get a green bell pepper too).

Next, stir in Worcestershire sauce followed by the chopped veggies. Then, add in the diced tomatoes and tomato sauce. Reduce the heat to medium-low, stir everything together and simmer for 8 minutes.
Cook Rice

I heated up Trader Joe's brown rice in a bag that comes frozen and you microwave it for 3 minutes and then its done!
Prepare the Toppings

Shred the cheddar cheese and chop up the cilantro.
Finish the Meal

Add the cooked rice to the skillet.

Add the corn to the skillet.

Let the corn cook for a few minutes and stir everything together to combine.

Remove the skillet from the heat and sprinkle the cheese on top. Wait until it is melted.
Ready to Serve

Spoon the mixture onto a plate and sprinkle some cilantro on top and Enjoy!
Make it Kid-Friendly

We didn't add the cilantro on top for my boys and they LOVED this meal! It is kid approved!
