Bacon Carbonara Pasta Pie

We made this delicious and indulgent meal for our New Year’s Eve dinner last year. It isn’t a meal that is low on calories or fat but it’s so worth all of it. You can make this pasta pie for a romantic dinner at home or when you are celebrating a holiday and I promise, it will be a crowd-pleaser!

Bacon Carbonara Pasta Pie

This unique meal was so memorable! The Alfredo sauce with the bacon is so delicious!

Ingredients

Pasta Pie

  • 8 oz bacon
  • 8 oz spaghetti
  • 2 large eggs lightly beaten
  • 1/2 cup parmesan cheese freshly grated
  • 1/2 tsp dried italian seasoning or dried parsley
  • 1 batch Alfredo Sauce
  • 1/2 cup mozzarella cheese

Garnish

  • flat-leaf Italian parsley

Alfredo Sauce

  • 1/2 cup butter
  • 2 1/2 tbsp cornstarch
  • 1/4 tsp xanthan gum
  • 2 cups half-and-half cream
  • 1 1/2 cups parmesan cheese freshly grated
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 350°

Alfredo Sauce

  1. Gather all the ingredients for the sauce, butter, cornstarch, xanthan gum, half-and-half, parmesan cheese, salt and pepper.

  2. Get out a medium size sauce pan and start by melting the butter over medium heat. Sprinkle the cornstarch and xanthan gum over the melted butter. You will need to whisk it constantly for 3 minutes. You want the mixture to look foamy and simmering, the goal is to not let it brown.

  3. Then add the cream, continue to whisk constantly for 4 minutes. Whisk until the sauce starts to thicken and is simmering. Remove from the heat and add the parmesan cheese (1/2 cup at a time). Continue whisking until the cheese has melted and the sauce has a smooth consistency.

  4. Either pour into a blender or use a hand held mixer (which I always prefer) and blend until nice and smooth. This step is needed so that the sauce won't separate later.

  5. I had a helper in the kitchen….Mr. T helped with the blender.

  6. Season with salt and pepper. Set aside the sauce. You can make this sauce to freeze to use at a later time and if you do, make sure it cools down completely and store in an airtight container.

Bacon

  1. Cook up the bacon in a frying pan and set aside over some paper towels.

  2. After bacon has cooled, crumble it into small pieces.

Pasta

  1. Get out a large pot and boil the water for the pasta. Cook the spaghetti for 5-6 minutes. You want the pasta to barely be soft. Drain and transfer to a bowl.

Pasta Pie

  1. Get out a small bowl and whisk the eggs.

  2. Add the italian seasoning or dried parsley to the eggs.

  3. I had a helper measure out the parmesan cheese.

  4. Add the parmesan cheese to the eggs and gently combine all together. Then pour mixture over the cooked spaghetti in the bowl. Use some tongs to combine eggs mixture into the pasta.

Assemble the Pasta Pie

  1. Lightly grease a 9" pie dish. Put the pasta in the pie dish. Make sure the pasta covers the entire bottom and goes up on the sides. You can press it down and shape it where you want it.

  2. Spread the alfredo sauce over the spaghetti.

  3. Next, sprinkle the bacon over the sauce.

  4. Lastly, sprinkle the mozzarella over the top.

  5. Bake in the preheated oven at 350° for 40 minutes until the sauce is nice and bubbly. Sprinkle with fresh parsley and Enjoy! We served it with asparagus and it was a perfect pairing.
