Happy Monday Friends! Here is our meal plan for the week. I decided to keep our meal plan very simple. I’m not using recipes, just basic meals with simple ingredients. We do need to keep good nutrients going into our bodies to help keep us healthy. I recommend trying to make a soup this week. One that will feed you for a couple of nights plus making more to freeze for later meals.

For the chicken salad, I cook up 1 lb of the chicken to go on top of our salad. It is enough for my 2 boys to eat it too with their meal. I throw in a bunch of veggies on top of a bed of lettuce. Think, cherry tomatoes, cucumber, green onion, red bell pepper, hard-boiled egg, and avocado. I make my own salad dressing. 1 tbsp of dijon mustard, 1 tsp of apple cider vinegar, s & p and I whisk in EVOO until it gets to the right consistency. This is a very simple and basic vinaigrette that goes with most ingredients in a salad.

I’m cooking Tilapia this week, I sprinkle it with some fish seasoning and cook it in butter and garlic for 2 mins on each side. Right before it is ready I juice a lemon over the fish and it is delicious. When I saute the zucchini and onion, I use EVOO, salt & pepper, dried thyme, and garlic, simple and flavorful.
