Happy Meal-Planning Monday, Friends! I’m excited about our meal-plan for this week!
The beginning of the week I’m keeping it simple with the help of Trader Joe’s. We like their fried rice, egg rolls and meatloaf. Since we are cooking a lot from home right now, there’s nothing wrong with not making a recipe meal every night. I also get the tilapia from Trader Joe’s in the frozen section and it’s delicious.

For our meals on the weekend, I decided to use the slow-cooker to help me out since I never feel like cooking once nighttime rolls around. The pulled pork recipe looks so tasty, can’t wait to put the meat into some tacos to enjoy. On the linked recipe I provided you, it also gives you ideas with how to use the leftover meat.
We have made the Creamy Chicken Corn Chowder before and enjoyed it! I had a lot of the ingredients on hand from when I was stockpiling at the grocery store at the beginning of quarantine, so that’s a win!!
